I often have a few books with bookmarks in them at once. I enjoy classics more than contemporary works of fiction, often read historical fiction, and love to get glimpses into other people's lives by reading memoirs and biographies.
At any time, we usually have Gruyère and asiago for me; Swiss & bleu for Vinny; pepperjack, Cheddar & Philly for Nate in our fridge. Could be dangerous to learn more favorites...

My guess is that it might be fun to learn about or even try, but, like making wine, is better left to the experts.
Yum! I'd rather have a plate of cheese on my lap than the books though! ;-) But I do love to look at cheese too. Those book covers look awesome, Christine. Our new cheese magazines at B&N (Culture, and I forget the other one) make me salivate.
I think goat cheese is my favorite, and I also like bleu, gorgonzola, feta, cheddar, havarti, brie...not too many I dislike.
Christine, I had French cow's milk at a fromagerie in the south of France (the family had a farm and also a store front) a couple of years ago--it was very fresh and mild, :). I'm not sure it was Beaufort exactly, but I think you would like it--hope you get to try some of the cheeses on your list soon!

I'm 98% sure we have the two on the right (not The Cheese Plate) at B&N.
I know this because I drool and get a faraway look in my eyes whenever I walk past Cookbooks.

McCalman says that sheep's milk makes the best cheese. And he says there are only three real British cheddars: Keen's, Montgomery's, and Reade's.

Durrus (cow's milk, Irish)
Ticklemore (goat's milk, English)
Wensleydale (cow's milk, English)
Wensleydale always makes me think of Wallace & Gromit. ♥
